The cultivation of blue agave plants for Calle 23 Tequilas begins with a meticulous selection of plants from the "Los Altos de Jalisco" (The Highlands) region, located between Tepatitlan and Arandas. The agave plants thrive in this region thanks to hot, sunny dry spells followed by wet, rainy seasons, excellent soil rich in minerals, and agave plants that need 7 to 9 years to achieve full maturity. Calle 23 Blanco is hand-bottled after being blended with nearby pure spring water to achieve a 40% alcohol by volume. The Calle 23 Reposado and Aejo are rested in barrels of American Whiskey for eight and sixteen months, respectively.
