Francois and Delphine Boulard run this tiny biodynamic Marne Valley estate. Their Champagne Les Rachais Brut Nature is a single vineyard Chardonnay from 50 + year old vines vinified in oak barrels and disgorged with zero dosage. Complex, rich, and sophisticated with hints of baked quince, fresh pastry, nuts and dried citrus.
This small, high quality biodynamic estate is today run by 6th generation Francis Boulard and his daughter Delphine. They have 4.5 hectares in the Marne Valley. This is a single vineyard Chardonnay, 50 + year old vines from a massale selection. Vinified and aged in small oak barrels with malolactic fermentation and batonnage. Disgorged in 2021 with zero dosage.
Complex aromas of baked quince, fresh pastry, nuts and dried citrus with a hint of cep. Gorgeous creamy texture with a vibrant yet ultra fine, silky mousse which caresses the palate – really classy wine of great refinement .
